Avocado Pasta Summer Salad
Ingredients:
2 cups (before cooked) smaller pasta
1 cucumber, seeded and diced
1 big tomato, seeded and diced
1 small red onion, diced
2 Haas avocados diced
Vinaigrette:
⅓ cup extra virgin olive oil
2 lemons juiced
1 tablespoon dijon mustard
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon grated fresh garlic
Whisk ingredients well!
Directions:
Cook pasta according to package instructions and let cool.
Dice up all of the veggies, add cold pasta, toss with vinaigrette, top with some fresh parsley and enjoy.
