Chicken, Ham, Broccoli & Rice Bake
We had leftover chicken and ham from the weekend, but you can use rotisserie chicken and any store-bought ham.
This is a meal in a pot! It’s super easy and only uses one cooking pot!
Ingredients:
6 cups rotisserie chicken
1 lb cooked ham diced
6 cups roughly chopped fresh broccoli
3 cups chicken stock
2 tablespoons olive oil
1 cup Chardonnay
1 diced white or yellow onion
1 tablespoon chicken base
1 can of cream of mushroom soup
2 cups of white rice
¼ teaspoon red pepper flakes
1 teaspoon kosher salt
Directions:
In a Dutch oven, sauté, diced onions, and olive oil until translucent.
Then add chicken, ham, broccoli, water, chardonnay, bouillon, cream of mushroom, red pepper flakes until lightly boiling.
Add in rice and mix thoroughly
Put lid on and pop in a 375° oven to bake for 45-60 minutes or until rice is cooked.
Give it a good mix/fluffing and enjoy with some bread and butter.
