Chicken Pad Thai with Veggies and Basil
I came up with this recipe with my kids. We prefer peanut flavor and it is so expensive to order out! The one thing I should've added to this dish was green onions. So I had them if you like!
Recipe & ingredients:
1 pound of thinly sliced chicken breasts
2 cups of your favorite vegetables
1 cup of soy sauce
2T prepared hoisin sauce
1 T fresh chopped garlic
½ tsp prepared wasabi
1 cup (or more!) peanut butter
¼-½ cup chicken broth or pasta water to thin the sauce
1-2 T fresh chopped basil
Red pepper flakes to taste
Instructions:
In a hot pan or wok, cook the chicken with some oil, add the veggies when the chicken is mostly cooked, then throw in the eggs and let them sit for a second to scramble.
Warm the sauce ingredients in a separate pan to combine the peanut butter and then mix it in the wok with the veggies, eggs & chicken & then add the noodles.
Serve with the basil sprinkled on top and red pepper flakes for some heat.
