Chicken with Artichoke Hearts, Scallions & Garlic Cajun Orzo
Another one pot meal! I'm on a roll. This is pretty spicy for the average person, but we live in the New Orleans area so it wasn't very spicy to us . 😂 So make sure to adjust the spiciness to your taste. This only took about 30 to 40 minutes to prepare, the prep is super easy. You could use rice if you are gluten-free. Here are of all the ingredients.
Here's the Instagram link followed by the recipe below:
Ingredients in order of use:
3 tablespoons olive oilÂ
2 tablespoons butterÂ
2 lbs chicken breast
Brown your chicken coated with the following ingredients:
1 tablespoon of Tony Chachere's
¾ teaspoon kosher salt
½ teaspoon pepper
â…› teaspoon crushed red pepper
¼ teaspoon cayenne
Set aside chicken and sauté in same pan:
1 bunch green onionsÂ
1 yellow onionÂ
1 overflowing tablespoon grated garlicÂ
2 cups chopped artichoke hearts
1 cup heavy whipping creamÂ
1 cup grated parmesan
2.5 cups Orzo pasta
5 cups chicken stock
Bring to boil, add back in chicken, bake at 400° for 10 to 20 minutes. Make sure your chicken is cooked through.
How much artichoke hearts do you add? and when do you add then in the recipe? I do not see any mention of them other than they are in the title.
