Chocolate Chip Cookie Cake with Buttercream Frosting


This cake is pretty easy to make! It's definitely for those who love sweet and chocolate!


Recipe:


Ingredients:

¾ cup butter

1 cup brown sugar

1 egg + 1 yolk 

2 teaspoons vanilla extract 

2 cups (250g) all-purpose flour

2 teaspoons cornstarch 

1 teaspoon baking soda 

½ teaspoon salt (only if you used unsalted butter)

1-¼ cup chocolate chips 


Frosting:

½ cup butter

1-¼ cup  powdered sugar 

¼ cup  cocoa powder 

1-½ tablespoons heavy cream or milk

Dash of salt (if you used unsalted butter)

1 teaspoon vanilla extract 


Directions:

  • In a large bowl, beat butter on medium speed until completely smooth and creamy (approx 1 minute).

  • Add the brown sugar and beat on medium speed until creamy (approx 1 minute).

  • Mix in egg, yolk, and vanilla on medium-high until combined (scrape sides as needed).

  • In a separate bowl, combine flour, cornstarch, baking soda, and salt.  

  • On low speed, slowly mix dry ingredients into wet ingredients until combined. Dough will be thick. 

  • Add chocolate chips and mix for 5 seconds 

  • Press dough into a well-greased 9” round baking pan.  

  • Bake at 350° for 20-25+ minutes. 


Frosting directions:


  • With a hand-held mixer, beat the butter on medium speed until creamed (approx 2 min).  

  • Add powdered sugar, cocoa powder, cream, vanilla, and salt. Beat until fluffy.

  • Add sugar or milk if needed to reach desired thickness.  

  • Pipe or spread frosting on cooled cookie.
