Creamy Pumpkin, Ground Turkey & Sage Bowtie Pasta
Recipe:
12 ounces ziti or rigatoni noodles, cooked to al dente
1 pound ground turkey
2 onions, diced
3 cloves garlic, minced
1 bay leaf
1/2 tsp dried thyme
1/2 tsp ground sage
1/2 teaspoon nutmeg
1/4 teaspoon red pepper flakes
pinch of cinnamon
1 cup dry white wine
1 cup heavy cream
1 cup chicken stock
15 oz can pumpkin puree
salt and pepper to taste
1 cup finely grated Parmesan cheese
Instructions:
Preheat the oven to 350°
Brown the turkey over medium heat with some olive oil, salt and pepper.
Transfer to a bowl and reserve.
Add the onion, garlic, and bay leaf. Cook until the onion is translucent, Add spices
Cook one more minute.
Add the wine and cook until reduced by half. The heat should remain to medium high.
Add the stock, stir in the pumpkin puree.
Mix until everything is incorporated.
Stir in the turkey and heavy cream.
Top with parmesan.
Bake for 25-30 minutes
