
Creamy Tomato, Orzo Soup (Crockpot or Stove)
I've been making this soup since my kids were little. We used to call it "alphabet soup" because our local market sold a little box of alphabet pasta. We have changed it to orzo, but miss the alphabet pasta!
Although I write the recipe directions in stages, you can honestly dump in everything except for the orzo & the cream all at once and either set it on high for 3 to 4 hours or low for 6 hours. Either way, wait to add the pasta and then the heavy cream until about 20 minutes before you serve it.
Here are the instructions for the best possible result and also a link to our Instagram video:
Crock pot on high (or do a quick sauté)
2 small, diced yellow onions
1 cup diced carrots
1 tablespoon grated fresh garlic
45 minutes or so later add:
32 oz chicken broth
2 cups of your favorite marinara
3 tablespoons tomato paste
2 cups of pre-cooked chicken, chopped
(this is optional and you can use the meat from a rotisserie chicken, or leftover chicken breast, or even high quality, canned chicken!)
AND
Spices:
½ teaspoon kosher salt
¼ teaspoon pepper
⅛ teaspoon thyme
⅛ teaspoon dried oregano
⅛ teaspoon red pepper flakes
½ teaspoon chicken base
When your pot is boiling add in:
¾ cup orzo pasta
When the orzo pasta is cooked through, you are ready to add your 1 ½ cups cream and serve with a nice crusty bread.
