
Crockpot Chicken Enchilada Soup
In the crockpot on high until chicken shreds easily
1-2 lbs chicken breasts
1 yellow onion diced
2 cups diced yellow & red bell peppers
1 packet taco seasoning
3 cloved chopped garlic (1 tablespoon)
2 cans (28oz each) tomato sauce
Remove chicken, shred, set aside
Blend sauce until smooth then mix in 1-2 cups heavy cream (or half and half if you prefer)
Top with jack cheese, sliced green onions & sliced baby red peppers.
