Crockpot Orzo with Fresh Tomatoes & Cheese
Crockpot Cheesy Fresh Tomato Orzo - I had some beautiful vine ripe tomatoes that needed to be used and came up with this recipe on the fly. It is so fresh tasting and so creamy! Comfort food for me. It's easy too! I popped the tomatoes in the crockpot, went to run errands and finished it when I got home.
Recipe:
6 large vine fresh tomatoes
¼ cup olive oil
1 tablespoon kosher salt
½ teaspoon black pepper
¼ teaspoon red pepper flakes
6-8 cloves of garlic
fresh basil leaves
On low 4 (ish) hours
Then smash the cooked tomatoes directly in the pot.
Turn crockpot to high
Add in:
1 cup of uncooked Orzo pasta
½ cup cream
1 ½ cup whole milk mozzarella
1 cup shredded parmesan
3 heaping tablespoons tomato paste
Stir thoroughly and cover and cool (on high) for 40 minutes (stirring occasionally).
Top with an additional ¼ cup of Mozzarella.
Cover to melt for 5 minutes
Serve with some crusty bread
