Easy apple Galette
I totally cheat by using pre-made pie crusts. This recipe is tart, not too sweet and not too filling, which I like. My family adds whipped cream or vanilla ice cream to sweeten it up a bit.
Ingredients: (makes two)
3 large apples granny smith apples peeled and cut into thin slices
5 T brown sugar
1 tsp lemon juice
2 tsp cornstarch
1 tsp ground cinnamon
1/8 tsp salt
1/2 tsp vanilla extract
1 large egg, beaten (to glaze the crust)
Coarse sugar, for sprinkling
Pre-made pie crusts (which usually come in a package of two)
Directions:
Preheat oven to 375°
Make the apple filling – toss the apples, sugar, lemon juice, cornstarch, spices, and vanilla together.
Unroll the pie dough (I use parchment paper underneath)
Arrange apples on top.
Fold in dough edges about an inch over your apples.
Brush crust with egg wash, then sprinkle with coarse sugar.
Bake until crust is golden brown (40-50 minutes).
Let cool a little bit and serve by itself, with whipped cream or vanilla ice cream.
