Easy Peasy Cheesy (one pot!) Crockpot Bolognese


All in one crockpot! This will feed a big family or you can bring it to a potluck. I made it for Sunday dinner and then sent the rest home in meal sized portions with my daughter back to share with her college roommates. 


Here’s the recipe!


In the crockpot on high for 3 hours:

2 lb ground beef (fresh or frozen!) 

2 24oz cans chopped San Marzano Tomato

6 oz can tomato paste

1 onion, chopped

4-5 cloves garlic, chopped

1 bay leaf

1 tablespoon italian seasoning

¼ teaspoon red pepper flakes 

1 teaspoon salt

½ teaspoon pepper

1 bay leaf

1 bunch of fresh parsley (it will be removed later)

1 tablespoon olive oil

On high for 3 hours, stirring occasionally. (Make sure to measure and make it cooks to at least 165 degrees for several minutes!)


Next:

Remove parsley stems & bay leaf 

Add in 1 cup water

Add in 1 lb of cellentani (or pasta of choice)

Crockpot on high until pasta is tender. (Approx. 45 min. Depending on thickness of pasta)

Mix in 2 cups grated parmesan


Top with:

2 cups shredded Mozzarella

1 cup shredded cheddar (optional) 

Cover again until cheese is melty.


Serve and enjoy!
