Friday Night Pantry Pot Roast
This is the secret to emptying out your pantry and the extra veggies that you have left in your fridge on Friday! It gets a little bougie by adding some wine! But it's almost a one pot meal, it's super easy, fast, feeds your whole family and it cooks while you're doing the things! Which you know is my favorite way to cook! You make it creamy at the end by topping each serving with a dollop of sour cream.

Recipe
3-4 lb roast chopped into 1-2 inch squares
2 tablespoons olive oil
2 onions sliced
1 cup cups cherry tomatoes
2 cups baby carrots
1 head of garlic peeled
1 package of Lipton onion soup mix
1-2 lbs of red potatoes, cleaned
2 cups of any wine (the dryer the better)
1 tablespoon kosher salt (then add more to taste at end)
1 teaspoon pepper
Instructions:
Sear the beef squares, coated in salt and pepper in a hot pan with 1 and butter.
In the crockpot add 1 tablespoon olive oil, onions, carrots, tomatoes, garlic.
On top of that add the seared beef, the potatoes, the Lipton soup mix, and the two glasses of wine.
Cook on high for 3-4 hours.
Serve with a dollop of sour cream and maybe some chives in a bowl with some crusty bread.
