Overnight Crockpot Tomato Soup
Here's the recipe:
In the crockpot on low before you go to bed:
1 diced yellow onion
5-7 tomatoes (on the vine)
(I also threw in 2 cups of baby tomatoes)
2 tablespoons olive oil
1 head of peeled garlic
1 tablespoon Italian seasoning
1 teaspoon salt (or more later to taste)
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
The next morning:
Use an immersion blender to smooth.
Add in broth as needed to thin!
Top with some heavy cream & freshly grated parmesan.
Serve with some crusty bread or a grilled cheese sammy!
