Party Beef Roast

Party Beef Roast


Ingredients:

3-5 pound roast (we used a shoulder roast)

1 white onion, sliced

2 cups carrots

1 cup chicken broth

1 tablespoon herbs to Provence

6 or more cloves of garlic

2 tablespoons kosher salt

2 teaspoons black pepper


Instructions:

  • Sear roast, coated generously with salt and pepper on both sides in a cast iron pan. 

  • Place in crockpot on high with half of the onions and carrots on the bottom and half of the onions and carrots on top.

  • Use the one cup of chicken broth to clean the good bits out of the pan, and then pour over the roast in the crockpot.

  • Top with Herbs du Provence then slow cook on high for about five hours. Then turn it down to low for the remaining hours.

  • Serve with our famous mashed potato recipe and some simple peas.
