Spicy Sweet Potato Soup

Spicy Sweet Potato Soup in the crockpot!


My college-age daughter loves soup and loves spice so I made this just for her. She texted me, "Dude that soup is bussing...might need a running IV...delicious"  (She's a very articulate honors student who likes to crack me up with the texting nonsense!) 


Anyways, it is spicy so if you only like a little spice reduce the amount of red pepper flakes and chili powder! Enjoy!


Recipe:


In the crockpot on high:

3 tablespoons olive oil

4 tablespoons diced yellow onion

4 cups diced sweet potatoes

1 teaspoon kosher salt

½ teaspoon pepper

1 teaspoon granulated onion

½ teaspoon nutmeg

¼ teaspoon red pepper flakes

3 MORE tablespoons olive oil


  • After 3 hours on high add in:


4 cups chicken broth

2 tablespoons roasted garlic

½ teaspoon chili powder (less if you need it less spicy)

2 tablespoons tomato paste

1 teaspoon fresh grated ginger


  • Cook on high for another 30-60 minutes

  • Let cool a bit and pop in the blender to purée.

  • Add 1 cup heavy cream

  • Serve with some yummy bread
