Split Pea & Smoked Sausage Crockpot Soup.

 

Crockpot Soups are the best, especially in the Winter! This Split Pea & Smoked Sausage Soup turned out smokey, luscious and creamy. Just when you think that the dried split peas aren't going to dissolve at about hour 4 1/2 it suddenly looks like split pea soup...but this is better than split pea soup because it's brothy, and not quite as thick, which we prefer.


This is the perfect soup to warm you up! It's super easy, as all of our recipes try to be, and it is the best split pea soup we have ever tasted.

Recipe:

2 tablespoons extra-virgin olive oil

1 pound bag of green split peas 

32 ounces of chicken broth

1 onion, diced

1 cup carrots, diced

3 cups diced smoked sausage


¼ teaspoon basil

¼ teaspoon dried oregano

¼ teaspoon ground black pepper

¼ teaspoon dried thyme

¼ teaspoon smoked paprika

½ teaspoon dried parsley

⅛ teaspoon crushed red pepper

½ teaspoon dried chives

1 teaspoon kosher salt

1 bay leaf

3 cups water

2 tablespoons chicken base


In the crockpot on high for 6-8 hours, stirring every hour or so.
