Szechuan Crock Pot Chicken Thighs


My family devoured this. I know you can buy pre-made Szechuan sauce but this was so easy and we already had everything on hand. The only thing I would probably add is fresh garlic and finish it off with some fresh herbs on top, but we were really hungry and didn't have time to make it look pretty!

Everyone went back for seconds!

Ingredients:

3-5 pounds of boneless, skinless chicken thighs

Sauce:

1 ½ cups Barbeque sauce (We like Sweet baby Ray's)

½ cup soy sauce

2 T Chili paste

2 tsp sesame oil

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 T chicken base


Instructions

  • Combine all of the ingredients for the Szechuan sauce and then stack in layers in the crock pot with sauce in between each layer. 

  • Cook on high for 5 hours. The meat should be pull apart tender.


We served it over cooked white rice with sautéed broccoli.
