The Best Crunchy Shredded Beef Tacos Ever!

These are the best tacos we have ever tasted! My husband kept looking at me like I was the queen of all cooking, marrying me was finally validated...after 25 years!

Makes approximately 16-20 tacos
To make the shredded beef use the crockpot barbecue beef recipe, here's the link
•Melt into the prepared beef either ½ cup heavy cream or 4 oz of cream cheese and 1/2 cup chicken stock.
Ingredients:
For tacos:
The Crockpot Barbeque Beef recipe for the filling
Either ½ heavy cream or 4 oz. cream cheese
½ cup chicken stock
20 small corn tortillas
6 (or more) tablespoons olive oil
3 cup shredded Monterey Jack cheese
½ cup (or more) canned corn
½ cup (or more) black beans, rinsed
2 (or more) limes
For Creamy Taco Sauce:
Mix together
1 tablespoon mayo
½ cup sour cream
1 teaspoon graded garlic
the juice of ½ a lime
Hot sauce to taste.
Directions:
On a sheet pan, bake olive-oil-coated tortillas in the oven at 400° for for approximately 10 minutes until golden.
Spoon onto half of the tortilla: a spoonful each of the beef mixture, corn, black beans and shredded Monterey Jack cheese
Carefully fold tacos in half
Place back in a 425° oven until cheese is Melty and tacos are light brown(ish)
Top tacos with more shredded cheese, the Creamy Taco Sauce , some hot sauce and lime juice
